Chris Denney joins Notting Hill restaurant Caia for summer residency

Former 108 Garage and Fiend chef Chris Denney has taken a summer residency at Golborne Road restaurant Caia.

The high-profile chef will cook alongside Caia co-founder Rishabh Vir offering a menu of dishes influenced by cuisines across the world and cooked over fire ‘with fat, salt, smoke and spice at its core’. 

Denney is well-known in the area having previously helmed the stove at acclaimed Notting Hill restaurants 108 Garage and Fiend (both are now closed). 

The latter was backed by Caia’s founders Vir and Tim Lang, who are local to the area. The pair launched Caia in 2022 as ‘music-forward’ restaurant and wine bar. 

Small plates include mutton salami served with pickled guindilla chillies; cod roe with BBQ crisp bread; and red prawn with black cherry sriracha while larger plates take in black carrot with sea urchin sauce and lardo; crab with buttermilk and bottarga on rose gem and salmon belly with scotch bonnet and dried mango. 

“Chris is a special cook, who for me embodies Golborne Road. It’s a unique place, full of flair and history. It makes so much sense for him to bring his wealth of experience back to the street,” says Vir.

“I’m excited to see what he can do taking his approach to cooking and adapting it to the three metre Rhys Allen Grill we have at Caia. Working with him at Fiend and now here, we share a lot in common when it comes to flavour and taste.”

Denney added: “I’ve been cooking around Notting Hill for some time - I love the fact that there are so many exciting restaurants opening now, which is just what the area needed - and Caia is such a brilliant spot. More than anything else, we want to have fun with it.” 

The residency will run until the end of September.
