Manchester’s New Wave Ramen to launch first permanent site

On Tib Lane in Manchester City centre, the two-storey restaurant will serve the brand’s signature ramen alongside an evening izakaya-style menu that ‘celebrates native produce with Japanese soul’ with many dishes cooked on a binchotan-fired charcoal grill. 

Complementing the food will be a ‘thoughtfully-curated’ wine and sake list, highballs, and local beers.

A crowdfund to help support the launch is set to launch on 1 August offering a chance to be one of the first to dine at the restaurant, tickets to events and other rewards. 

Owners Phil Cook and Matt Walsh are working with DJ and member of UK band Editors Elliott Williams to create an eclectic playlist that celebrates ‘the link between food and music cultures’. 

The venue will be built on the ‘core principles of Japanese hospitality’, with the aim to offer the very best experience for customers with ‘no geishas and no gimmicks’.

“New Wave Ramen are bringing together a strong team on all fronts, with experience from Michelin restaurants and ramen shops across Europe,” the press material reads. “The team will be armed with knowledge and passion for Japanese food and culture, and be ready to share this with their guests from October.”
