Former The Holborn Dining Room executive chef and self-styled pie master Calum Franklin will launch a restaurant in Paris early next year.

Slated for a February launch, Public House will be located in the French capital’s Opera area and will offer a menu that the high-profile chef’s ‘love of traditional British cuisine and his training in the great classics of French cuisine’.

Best known for his intricate pies, Franklin oversaw The Rosewood hotel’s The Holborn Dining and the adjoining The Pie Room between 2014 and 2022. 

During this period the restaurant was a regular on Restaurant’s list of the top 100 restaurants in the UK.

On Rue Daunou, Franklin’s new venture will offer a pub menu of simple dishes ‘curated with impeccable local produce’. 

There will be ‘unmissable’ pies created ‘according to the seasons and his desires’.

Billed as a ‘unique venue at the crossroads of France and England’ Public House will be spread over three floors gently designer blending ‘the styles of the Parisian brasserie with those of the English pub’.

Design details will include British-inspired tartans and leathers and the typical tiles of the great French brasseries. Public House aims to bring together Parisian gourmets, tourists and night owls.

“I’m delighted to have the opportunity to share the British cuisine that I love, and to do it with the best of French produce. Public House will be a wonderful marriage of these two ingredients,” says Franklin, whose creative pie-making have earned him a following cult on social media.

“I’ve always dreamed of working in Paris, I’ve been here so many times over the years that the city has become like my second home; with Public House, I now have that home.”
