The Chef: Giorgio Locatelli Chef/Patron Locanda Locatelli, London W1. The Kit: Ultimate combined pasta machine (with sheeter, cutter)

• 95 x 45 x 90cm • 104kg • £5,000 + VAT The sales spiel "Modula is the ultimate professional combined pasta machine. It has been designed to match the needs of restaurants, canteens, rotisseries, bakeries and other pasta-related businesses.

It allows the production of several kinds and shapes of pasta and requires a limited kitchen space."

The verdict "The Modula is a very sophisticated, semiindustrial pasta machine. It's not designed for a restaurant like ours with under 100 covers but would be good for a banqueting house, a caterer or a shop. The machine is so large that you'd have to have a separate room to keep it in, with the right temperature and humidity, and it also makes 8.5kg of pasta at a time, which works out as 85 portions at one mix!

"It is a very good machine but complicated to use; it would take two to three weeks to really CHEF TESTED learn how to use it properly and adapt your recipes to it. It didn't come with a recipe for the pasta dough so we had to use our own recipes, which are for a pasta to be made by hand; the process and finish are quite different.

The pasta you get from it is not as good what you get by hand – it doesn't curl in the same way, you get flat sheets and then shape them, so it's great for lasagne but not so good for more interesting shapes."
