The Friulinox Combi 4 is a compact, combined chiller and freezer unit incorporating a chiller/freezer and a blast chiller/freezer that can freeze food down as low as -40˚C then store it at a chilled temperature of 0°C ready for service. It is being aimed at owners of sushi bars or restaurants serving sushi, sashimi and other raw fish dishes because of its dual function and ability to store fish so hygienically.
From December 2011, EU 1276/2011 specified that raw fish must be stored at temperatures of -20˚C for a minimum of 24 hours or at -35˚C for a minimum of 15 hours. This process is aimed at eliminating parasites that can live within fish intestines. The Combi 4, which is designed by Friulinox, the leading Italian manufacturer of refrigerated cabinets for the food service industry, is able to keep fish stored at the required temperatures giving operators peace of mind.
The unit is available in the UK through Cold Service Distribution, part of the Cold Service Group, who can offer complete design, installation, maintenance, service and asset refurbishment packages to suit specific requirements. Call 01425 485700.
Why you should buy it:
“European regulations introduced late last year demand that raw fish must undergo ‘thermal treatment’ in a freezer to eliminate the risk of parasite contamination,” said Adrian Westrup, commercial director at Cold Service Distribution. “The Combi 4 has been specially developed to provide this treatment in one compact and integrated piece of refrigeration equipment. It complies fully with the new regulatory requirements and is a great, hygienic solution for sushi bar and hospitality applications that’s easy to use and saves on space.”
