In this exclusive video Robin tells us how Paradise Garage will be a different dining experience to his Clapham restaurants.
“The thing that makes us different to The Manor, and the Manor different to The Dairy, is the people that are in it, and it’s also what’s made The Dairy and The Manor a success, it’s never going to be once person. The team that I have and the team that I’ve had from the beginning are the people that make it,” he said.
With the new restaurant being the first that the couple have been able to design from scratch, Robin wanted to make the space his own.
“We wanted a semi-industrial feel because it is an industrial space – it’s a big-old railway arch – so the designers worked with it and went a bit crazy with the lights. I was a bit worried about it but now it’s all in it looks absolutely stunning,” he continued.
Robin also gave us an insight into the aims of the restaurants, the suppliers he uses and how he recruits new staff.
