Ormer Mayfair announces stellar new management team

Shaun Rankin’s soon-to-open Ormer Mayfair site will have a team with previous experience including the Michelin-starred Restaurant Sat Bains, Gordon Ramsay at Claridge’s, and Hélène Darroze at The Connaught, it has been announced.

The new 85-cover operation is set to open this September, and will be housed within the newly refurbished, five-star, 129-bedroom Flemings Mayfair hotel.

Head chef will be Kerth Gumbs (above, centre), who previously worked at The Arts Club in Dover, spent two years with Jason Atherton overseas, and also held chef positions at The Wolseley, L’Atelier de Joel Robuchon, and Tom Aikens.

Restaurant manager will be Agnieszka Josko (above, left), who will join from the same role at the two Michelin-starred restaurant, The Greenhouse, and brings experience from Gordon Ramsay at Claridge’s and Hélène Darroze at The Connaught. She has also previously worked on front of house with Shaun Rankin, when he was at Bohemia in Jersey.

Head sommelier will be Andreas Rosendal (above, right), who was previously in the same position at the Michelin-starred Brasserie Chavot, and assistant head sommelier for two years at the two-star Restaurant Sat Bains in Nottingham. When at The Greenhouse, he also looked after its 3,600-bin wine list.

Commenting on the new team, Flemings general manager Henrik Muehle said: “Shaun Rankin and I have worked closely together to select the very best possible team for Ormer Mayfair. I know how vital it is to get the right team in place from the very start. We now have a super-talented brigade.”

Ormer Mayfair will form part of the £15m refurbishment currently taking place at Flemings, which is part of the Small Luxury Hotels of the World group. It will be the second Ormer site for Rankin, after the success of his Jersey venture of the same name, and his time at the hotel and restaurant Bohemia, which is now overseen by head chef and patron Steve Smith and his pastry chef partner, Ellen de Jager.
