Raymond Blanc’s Brasserie Blanc to open its first restaurant in a hotel

Brasserie Blanc, the French-style restaurant group from two Michelin-starred chef Raymond Blanc, is to open its first site in a hotel, the Marriott Bournemouth Highcliff, on 26 June.

The 108-cover restaurant at St Michael’s Road will be spread over four dining rooms, plus a 70-cover bar and an extra 42 covers on the outside terrace. All tables will have a view of the sea.

There will also be a 30-seat private dining ‘library’ area, furnished with oak tables and a mustard-yellow velvet Chesterfield sofa.

Open seven days’ a week, the restaurant will serve modern French-style dishes created by group executive chef Clive Fretwell.

It will also serve food and beverage room service to the hotel’s guests.

Décor will include the group’s signature mural wallpaper, plus reclaimed oak parquet floors, velvet and leather banquettes, art deco-style lighting, deep-buttoned sofas; and a feature log-burner in the bar.

The opening in the four-star, 160-bedroom Marriott Bournemouth Highcliff will be the group’s first hotel restaurant, and its 20th​ opening overall. The group has confirmed it will seek further opportunities in the hotel sector in future.

“This is an exciting new phase for Brasserie Blanc’s development. The bar, brasserie and terrace will be absolutely stunning and this is an exciting opportunity for us to scale up.”
