Nathan Richardson to head up new upstairs restaurant at Mayfair pub The Windmill

Nathan Richardson, previously the head chef of The Guinea Grill in Mayfair, is to head up the new upstairs restaurant at Mayfair pub The Windmill.

Richardson will now oversee the kitchens at both pub restaurants, with the Windmill Upstairs dining room reopening on Tuesday 9 September.

He has created a new menu for the 26-cover dining room that will features dishes including oysters and a three-strong selection of pies, for which the pub is famous.

“This is a chance for us to move outside our comfort zone and work with ingredients and techniques we do not always have time to explore,” he says.

“Creating new menus and dishes weekly will be a fantastic challenge and will lead to a vibrant and eclectic evolving menu. This really is an exciting time.”

Dominic Rowntree has joined The Windmill as restaurant manager with the wine list chosen by Vladimir Olaru, head sommelier at The Guinea Grill, alongside Jacopo Focacci of Berkmann Wines. The full 300-bin list at The Guinea Grill will also be available to Windmill Upstairs customers. 

“This is such an exciting time for us,” says Sujan Chowdhury, who heads up front of house now for both The Guinea and The Windmill.

“It is the perfect time to launch something new. We have had loads of time to plan and to test and we are all very excited about this new departure."

Downstairs at The Windmill will continue to serve its award-winning pies.

Oisin Rogers will oversee operations at both The Windmill and The Guinea Grill.
