Six by Nico to open cheese shop pop-up in Glasgow in advance of a permanent restaurant at the site

The team behind restaurant group Six by Nico is opening a cheese shop pop-up in Glasgow this month ahead of its plans to open a new restaurant in the location later this year.

Located in the former Fopp Music Store, which was recently acquired by the Glasgow-based restaurant group, The Cheese Club Shop will open in Glasgow’s west end at the end of this month.

Award-winning cheesemonger Stephen Sweet has joined the team to lead the pop-up store's day-to-day operations as well The Cheese Club’s online distribution services through the group’s food delivery arm HOME-X. 

The move is part of the group’s plans to grow its business both physically and virtually. The pop-up, on Glasgow’s Byres Road, will eventually become the next permanent site for the restaurant group, with it being granted permission to convert the former music shop and Santa Lucia Italian restaurant next door.

The company plans to extend the rear of the building to create outdoor seating and for the new venue to have a rooftop bar.

“We've always had big ambitions to grow our portfolio and open new restaurant brands throughout the United Kingdom and Ireland. Our journey started in Glasgow's West End, and the community we first served is vital to our organisation's development plans,” says Six by Nico founder Nico Simeone.

“We hope our customers are as excited as we are about The Cheese Club shop pop-up opening this month and our restaurant plans for the location on Byres Road later this year."
