Treehouse Hotel Manchester has signed up some of the North West’s most prominent operators to deliver its F&B program including chefs Mary-Ellen McTague and Sam Grainger.

Set to open early next year, the Deansgate hotel will have two restaurants: an all-day zero-waste restaurant from McTague that will have a grab-and-go element and a destination restaurant from Grainger who is being supported by Volta and The Refuge by Volta founders Luke Cowdrey and Justin Crawford.

Located on the ground floor, McTague’s as-yet untitled restaurant will combine a focus on sustainability with a ‘modern twist on traditional cooking techniques’.

There will be fresh pastries and hot and cold sandwiches to start the day as well as a grab-and-go offer alongside a seasonal, all-day menu.

With a CV that includes a spell at The Fat Duck, McTague already runs three restaurants in Manchester including The Creameries in Chorlton.

Grainger, Cowdrey and Crawford’s restaurant is also untitled for the moment but will offer ‘elevated Southeast Asian menus’.

Grainger’s projects include Liverpool’s Madre and Belzan. He also collaborates with Richard Turner on Freight Island’s Carnival.

Cowdrey and Crawford - who are DJs by trade - will work with Grainger on the food offering, beverage and music program of the 14th floor restaurant as well as curating activations in the hotel’s rooftop bar and McTague’s ground floor restaurant.

The 216-bedroom hotel is being billed as ‘fun, fresh and a breath of fresh air for a thriving global city’.

It will follow the launch of Treehouse Hotel London, which launched in 2020 and is currently home to Mexican restaurant Madera and Nancy Silverton’s Pizzeria Mozza.
