St. James’s restaurant Scully has gone tasting menu-only in the evening offering an eight-course standard menu for £110 and a vegan menu for £90.

Chef patron Ramael Scully says the menus have been in the works for some time - some of the development occurred during lockdown - and that the new evening offer 'will welcome a new era' for the restaurant, which launched within the Central St James’s development just south of Piccadilly Circus in 2018. 

The launch of the tasting menu coincides with the appointment of Hackney Coterie and Hide alumnus Dom Auger as head chef. 

Both menus start with three surprise snacks including arepa with aubergine sambal; and purple beetroot with fig leaf vinegar and urap sayur (caramelised spiced shredded coconut). 

Highlights from the standard tasting menu include Lake District short rib pastrami with urfa (a Turkish chilli pepper) while dishes from the vegan menu include nasi jagung (an Indonesian rice dish) with cooked dry cracked corn, sweetcorn kernels, corn dashi, green tomato, yeast flakes, candied Jalapeños and Australian black truffle.

Both menus conclude with ‘surprising and engaging’ seasonal petit fours made by pastry chef Adrian Petrovan.

“I feel it is the next step in the evolution of my food presentation, to offer a tasting menu,” Scully says. “It is something I have dreamed about pre-pandemic and now feel it is the right time to do it.”

Scully was born in Malaysia and grew up in Sydney with a mother of Chinese/Indian descent and an Irish/Balinese father. His diverse cultural upbringing translates into his cooking, with dishes reflecting the Malaysian flavours of his childhood and culinary traditions from his diverse family heritage.

Prior to launching his debut solo restauran​t Scully was head chef of Yotam Ottolengi’s NOPI restaurant in Soho. 

The two tasting menus at Scully are available now for dinner Tuesday-Saturday from 6.30pm (last booking at 9pm).
