Maciej Lesiewicz has replaced Emma Underwood as restaurant manager at Sally Abé’s Westminster restaurant The Pem.

Lesiewicz has spent the past eight years working at restaurants in London following a move to the capital from Rome, Italy, where he grew up having moved there at a very young age from Poland.

He began his career in London at Outlaw’s at The Capital working under Nathan Outlaw, before moving to two Michelin-starred The Square in Mayfair. From 2016 to 2020, he worked with Jason Atherton across his collection of restaurants, including Pollen Street Social, Little Social, and at the five-star Biltmore Hotel.

“I believe The Pem is outstanding and I’m incredibly proud to have joined the team and to be able to work alongside an incredible chef like Sally Abé. I really pride myself on a personal service, and I can’t wait to meet all of our guests and give them the full Pem experience,” he says.

The Pem opened at Conrad London St. James in Westminster in 2021. “All of us here at The Pem are very excited to have Maciej starting with us,” says Abé. “He comes from a great background with a very impressive CV, and I know the restaurant and our guests will be in great hands with him.”

General manager Emma Underwood has left The Pem to pursue new opportunities.
