Tom Sellers's new Mayfair restaurant to be called Dovetale
First announced back in June and set to open in May 2023, the restaurant's name has been confirmed as Dovetale.
The restaurant will be a departure from Sellers's two Michelin-starred Bermondsey flagship Story, featuring a heightened focus on sustainability, local and organic ingredients.
Dovetale’s menu will be 'rooted in a deep respect for seasonal produce', with an à la carte menu bolstered by a dedicated offering from the grill, a raw bar and an expansive wine programme.
The restaurant will also be joined by an adjacent destination cocktail bar at launch.
Dovetale will open at 1 Dover Yard at the forthcoming 1 Hotel Mayfair, overlooking Green Park, which will also open its doors in spring and mark 1 Hotels’ debut European property.
Alongside the new restaurant, the nine-story hotel will house 181 guest rooms, a bar, a café and a fitness and wellness centre. The hotel is being developed in partnership with Crosstree Real Estate, the real estate investor behind hotel projects such as The Standard, London in Kings’ Cross and Mama Shelter London Shoreditch.
