‘Reimagined’ steakhouse Pendergast’s to launch in Warrington

Hospitality consultant Laura Anne Harvey and local businessman Steven Prendergast have teamed up to open a ‘reimagined’ steakhouse in the Cheshire town of Warrington.

Set to launch later this year in the Cairo Street site that was once home to Mojo’s Tapas bar, Pendergast’s will seat 80 guests inside and a further 20 outside offering small plates and large cuts of meats alongside fine wines and cocktails.

The project is being billed as a 'flagship' restaurant that could be replicated in other ‘developing' towns and cities. 

The ‘light, airy, classic and stylish space’ will ‘lean away from the masculine’ edge that’s often associated with steak houses’. 

The menu is overseen by head chef Craig Kirk, whose CV includes Simon Rimmer’s Greens restaurant and the Living Ventures bar and restaurant group.

Small plates will include Argentine jumbo prawns on sourdough toast with chilli and garlic; smashed roast potatoes with beer cheese dip; and baked heritage beets with maple and mustard dressing. 

Steak options will include fillet, rump, rib-eye and porterhouse with additional prestige cuts available for pre-order. 

Steak alternatives, meanwhile, take in pan-fried chalk stream trout with warm tartare sauce, salt-baked celeriac steak with tahini pomegranate and maple; and pappardelle with chestnut mushrooms, spinach, parmesan and truffle cream sauce. 

A small deli selling local wines, cheeses and artisan products to take home will be housed within the site to ‘support local suppliers’.
