Sally Abé’s The Pem to close for the summer and reopen with ‘refreshed offering’

Sally Abé’s Westminster restaurant The Pem has closed for a ‘summer recess’ whilst a new kitchen is installed.

The restaurant - which launched within Hilton’s Conrad London St. James hotel in July 2021​ - will reopen with a ‘refreshed offering’ this Autumn. 

The former The Harwood Arms chef and her team plan ‘elevate their menus even further with new equipment, advanced techniques, and fresh ideas’.

Details of the new offering and the reopening date will be revealed later this summer. 

“This will be the kitchen that I’ve always wanted, with the space and tools to bring an uplifted experience for our guests when the restaurant reopens,” Abé says.

“We’re committed to investing in our guest experience so whilst I’m sad to be closing for the summer, I am so excited to reopen with the capacity to go beyond what is already an incredible experience. We’ll be back all guns blazing, so watch this space!”

The hotel’s Blue Boar Pub, The Hedgerow and The Orchard Room - which are also overseen by Abé - will continue to trade as normal.
