Mathew Carver to launch North Yorkshire restaurant Rind

The Cheese Bar founder Mathew Carver will launch a restaurant near Settle, North Yorkshire, this Autumn.

Carver’s first restaurant outside the capital, Rind will be located next to and will be run in partnership with award-winning cheese shop The Courtyard Dairy. 

The project is described as a cheese-focused restaurant that will ‘complement the dairy’s reputation as a mecca for cheese-lovers from both the county and further afield’. 

The menu at the 40-cover site will be focused on wood-fired pizza topped with British cheeses. 

Alongside pizza, Rind will offer cheese in its purer form, with an ever-changing selection of cheese boards and baked cheeses from the oven.

To complement this, Carver has teamed up with neighbouring business Buon Vino to curate a ‘distinctive-yet-easy-going’ wine list with a focus on natural producers, along with some more classic bottles, each chosen to match with particular cheeses. 

“I’ve been a fanboy of Andy and The Courtyard Dairy since I got into British cheese nearly 10 years ago,” Carver says. 

“His ethos on promoting and championing farm-made cheese and supporting our rural economies is so in line with our own values, I couldn’t think of anyone I’d rather have as our new neighbour. We aim to create restaurants that inspire us as a team and the opportunity to open a pizza restaurant with the most incredible views imaginable certainly does that.”

The launch will bring carver up to a total of four permanent locations, joining The Cheese Bar in Camden, Pick & Cheese in Covent Garden and The Cheese Barge in Paddington.
