Native’s Ivan Tisdall-Downes and Imogen Davis are launching a guest chef series aimed at promoting zero waste cooking methods.

Launching on 30 October in partnership with bookings platform Resy and running across nine nights, Fix The Food Chain will take the form of a series of dinners held at east London chef’s table restaurant The Sea, The Sea. 

The line-up of chefs includes Thomas Lemercier (The Princess of Shoreditch); Ramael Scully (Scully); Adriana Cavita (Cavita); Ash Valenzuela-Heeger (Riverine Rabbit); Dom Fernando (Paradise) Akwasi Brenya-Mensa; Sabrina Gidda; Kerth Gumbs (Fenchurch Restaurant); Aleksandar Taralezhkov (Dolma Bar). 

Each of the chefs will collaborate with Tisdall-Downes and Davis to create an experience that ‘explores cultural interpretations of zero waste cooking methods from all around the world’.

Native and each guest chef will create a cocktail and six-course tasting menu, shining a light on what sustainability means across different cultures ‘breaking down the borders and opening up the conversation for all to have a place to showcase their food and what it means to them’.

Tickets are priced at £95 per person which includes a St-Germain Hugo Spritz welcome cocktail and a six-course tasting menu, with the option for an accompanying drinks pairing priced at £65 per person. There will be two sittings per evening, 6pm and 8:15pm. 

“We’re thrilled to have the opportunity to work with and learn from our peers through their cooking, drawing on inspiration from different cuisines," says Tisdall-Downes.

"We feel it is an extremely exciting event concept for the restaurant industry, bringing such amazing culinary talent together to break the conventional cycle of restaurant dining. This truly will be a culinary adventure and we can’t wait!”

The announcement of Fix The Food Chain follows the closure of the pair’s Mayfair restaurant Native at Browns last month.

The pair opened Native at Browns in 2021 following the success of their original bricks-and-mortar Native restaurant near Borough Market and had achieved significant critical success, with the sustainability-focused venture appearing on Restaurant’s list of the top 100 places to eat in the UK in 2022. 

Tisdall-Downes takes a zero-waste approach and often explores ingredients that are largely unsung. His best-known dishes include pigeon kebab and squirrel lasagne.
