Former Royal Navy chef Lee Calver will open fine dining restaurant Thirty One in Plymouth next month.

The chef, who previously led the kitchen at Saltash pub The Croft, has taken on the former Rock Salt site on Stonehouse Street to open Thirty One with his partner and sous chef Chloe Lillicrap.

Described as a ‘casual fine dining’ restaurant, dishes on the launch a la carte menu will include starters of ham hock terrine, brawn fritter, charcoal mayonnaise, and pickled vegetables; and pork and sage scotch egg, triple mustard mayonnaise, and pickled red onion; and mains such as Indian spiced hake, braised rice, onion bhaji, garlic and coriander naan bread, butter curry sauce; and poached and roasted chicken, squash, hash brown, pine nut and sage jus.

It will also serve a Sunday lunch menu for £20 for one course, £25 for two courses and £30 for three.

Calver served seven years in the Royal Navy before beginning his culinary career in the Cotswolds before returning to Plymouth to run the kitchens of The Greedy Goose and The Croft.

Lillicrap also worked at The Greedy Goose as pastry chef before taking charge of the kitchen and front of house at The Croft.

The restaurant will open on 2 November.
