Former country pub The White Horse in Graffham has been transformed into a restaurant with rooms following a refurbishment and extension.

Located in the South Downs National Park in West Sussex close to Cowdray, Goodwood and Petworth, The White Horse is owned by tech entrepreneur Glen Manchester and his wife Asta, who were given the opportunity to create a restaurant with rooms back in April this year.

The result is a 38-cover dining area that also has a 10-seater private dining room as well as a wraparound garden with an outdoor kitchen for dining and drinks during warmer months and six bedrooms located separately to the restaurant.

The kitchen team is led by chef de cuisine Grant Jones, who trained at Le Gavroche in Mayfair before becoming a private chef. Grant’s menus will use local produce where possible, with venison sourced through the Sussex Woods Deer Management Scheme, which aims to reduce the number of fallow deer on the South Downs to allow for accelerated regeneration of the woodland.

It offers both an a la carte menu and an eight-course tasting option, the latter pricedat £120. Typical dishes from the a la carte include Sussex pork terrine with caramelised apple purée and hazelnut salad; Green Egg roasted crispy sweet potato fondant, sweet potato crisp, wild mushroom cream sauce and new season rainbow chard; wild sea bass, Jerusalem artichoke, lobster beignet and rouille; rack of South Downs lamb, braised shepherd’s pie and squash purée; and Sussex pear charlotte with caramel sauce and homemade pear sorbet.

The wine list has been put together by Tim Killen and features wines from Roebuck Estates Vineyard in Petworth among a list of global options.
