Restaurant, wine bar and shop Linden Stores will open in its third iteration later this month.

Dubbed Linden Stores 3.0, it will open in Knutsford on Thursday 23 November showcasing seasonal British food and low intervention wines from small-scale winemakers 

The 40-cover restaurant will make use of foraged ingredients and British produce with the sharing menu to include the likes of Mackerel, fennel and Cinderwood market garden bitter leaves with apple; and Cheshire game bird, turnips and leaves, wild mushrooms and quince.

Alongside the sharing plates menu, which will be available for £40 per person, it will serve a children's menu for 'adventurous under 12s' and a small à la carte menu available for walk-ins. It will also have a bar snacks menu featuring the likes of pickled Lyme Bay mussels; chicken liver pate, cracker and apple; and a Yorkshire charcuterie board.

The restaurant was originally launched in Highbury in 2017 by partners Laura Christie, formerly of Oklava​ and Kyseri, and Chris Boustead, formerly of Opera Tavern.

In 2021 the pair relocated the restaurant to the village of Audlem in Cheshire before moving again this year.

“The abundance of fresh, local ingredients we now have access to right on our doorstep is really exciting," says Boustead.

"It’s going to make for some really interesting seasonal plates on our sharing menu! Continuing our sustainable approach, any food waste will always be utilised too, whether it’s towards cooking stock or daily specials.”

Christie will oversee the wine offer ​and has created a wine list of unusual labels with a focus on sustainable, up-and-coming producers and British wines. 

“The countdown to our opening week is finally on and we can’t wait to welcome guests to our Knutsford location," she says.
