Pearly Cow sets summer opening date for Brighton site

Pearly Cow’s Brighton site has been confirmed for a summer 2024 launch.

Announced earlier this year,​ the site will be located within boutique hotel No.124 by GuestHouse on King’s Road, which is set to launch around the same time. 

Both the restaurant and the hotel are owned by brothers Tristan, James, and Tom Guest. 

The trio launched Pearly Cow restaurants within hotels in York and Margate this year. 

The wider GuestHouse was launched in 2021. The brothers also have a location in Bath. 

Front of house legend Diego Masciaga is working with the trio as a consultant.

Pearly Cow Brighton will be 170sqm and will seat 65 covers. 

In keeping with its other locations in Margate and York, Pearly Cow, Brighton’s menu is ‘devoted to all that thrives in the British Isles’ and will see the ‘very best local produce from field and sea’ cooked over open-fire. 

Dishes include the likes of crab croquette with lemon mayonnaise and pecorino; whole lemon sole with mussels, glazed potato and sea herbs; and the restaurant’s signature dish the The Pearly Cow, a beef tartare with Exmoor caviar, oyster cream and charred sourdough. 

Pearly Cow Brighton is billed as a moody, atmospheric space and will have an open kitchen, a private dining room that seats 16 and a space for pre-dinner drinks. 

“Pearly Cow is all about creating a sense of occasion for locals and visitors,” the brothers say. “The mood is both relaxed and fun, a place where people can unwind while enjoying the very best standard of food and service. Brighton has such an innovative and exciting food scene and we look forward to being an active part of it when we open our doors in the summer.”
