An ambitious food-led pub with rooms will launch in the hills of Wiltshire this summer following a complete restoration and expansion of an existing building.

Part of the Great Durnford Estate, The Great Bustard is named after the large birds that were once close to extinction but have now been successfully reinstated in the area.

Located in Woodford Valley close to the banks of the River Avon, The Great Bustard is just outside Salisbury and about three miles from Stonehenge. 

The pub’s restaurant will be led by head chef Jordan Taylor, who is in the process of creating a menu using ingredients from the kitchen garden and Great Durnford working estate.

The Great Bustard's interior will have ‘rustic charm’, with a bar featuring reclaimed materials and an open fire. 

There will be a total of 10 letting bedrooms, three within the main pub building itself and a further eight in three outbuildings. 

There is also a private dining room seating 12, an outside garden with a terrace and children’s playground.

The Great Bustard will also be home to a farm shop which will sell the chutneys, jams and other products made on the Great Durnford Estate. 

“It’s a unique concept, there’s nothing quite like it around,” says general manager Matheus Sanches.

“We’re not just providing beautiful accommodation and excellent food; we’re creating a destination that adds vibrancy to our area whilst also bringing back a place for locals to come together and foster a collective sense of pride in this beautiful pocket of English countryside.”
