Mexican restaurant Condesa to open in Bristol

Bristol-based hospitality group Season + Taste will open its latest restaurant in the city this month.

Called Condesa, the Mexican restaurant will open on Whiteladies Road next week.

Founded by Kieran and Imogen Waite, Season + Taste runs three restaurants in Bristol; Spanish tapas restaurants Bravas & Gambas, and Mexican restaurant at Cargo Cantina.

Head Chef Sean Martin is moving from Cargo Cantina to lead the food offer at Condesa with a menu that he describes as being ‘food that gives you dopamine’. Dishes will pay homage to classic Mexican cuisine as well as being inspired by modern Mexican cooking with fire and smoke being a focus of the cooking.

Menu items will include snacks such as Bristol cheddar quesadilla with shallots and pineapple salsa; beef tartar tostado, and fried chicken wings with larger dishes such as drunken mezcal prawns; grilled skate wing; smoked pork belly; and charred hispi cabbage.

“Condesa has been a long-term passion project, and the menu is designed to work for both a quick bar snack, and a special celebration,” says Martin.

The kitchen will have a custom-made grill from Firemade and the restaurant will have a hidden mezcal den serving a selection of artisan mezcals

Mezcal and tequila will be a major part of the offer, with a hidden Mezcal den containing a range of artisan mezcals to share.

“In Oaxaca we all fell in love with Mezcal, and the Mezcal Den is a fun little detail to showcase that,” says Kieran.
