Operator behind Sucre and CLAP London to launch Pan-Asian restaurant UBA in Shoreditch

The group behind Soho’s Sucre and the more recently opened Knightsbridge restaurant CLAP London will launch a new Pan-Asian dining concept in Shoreditch early next month.

On Great Eastern Street and forming part of the Hart Shoreditch Hotel, UBA will have 105-covers and a 12-cover PDR. 

Interiors by architecture and interior studio, Verhaal, will take inspiration from the culture and mythology of Asia with a palette featuring the traditionally auspicious colours of red and gold.

Design details will include a statement marble bar offering counter dining for up to 14, red velvet banquettes, lava stone tabletops, antique mirrors, and Asian ceramics. 

UBA will offer an up-tempo vibe through a soundtrack that changes as day turns to night along with regular DJ sets.

The chef behind the project is Paul Greening, whose CV includes Aqua Restaurant Group, Novikov, Harrods and Australasia. 

Signature dishes will include spicy salmon tartare with Japanese herbs, salmon roe and nori rice crackers served on an ice plate; Thai-inspired wok-fried monkfish with lime leaf, sweet chilli and oyster glaze; and Angus beef gyoza with onion ponzu, tomato miso and a charcoal veil.

The launch will bring the UAE-based Alpha-Mind up to a total of three London restaurants. It’s other brands include ONGAKU, Babylon, Sucre, Alma Bar, Bar Du Port and Iris.
