The St Pancras Renaissance Hotel has announced several appointments ahead of its soft opening at the end of next month.

Julien Maisonneuve, formerly head chef at Tom Aikens, will oversee the traditional British culinary offering at the hotel’s Booking Office bar and restaurant, as well as room service and events.

He will run the food and beverage operation separately to Marcus Wareing’s latest restaurant, The Gilbert Scott, which will be headed by the former Gordon Ramsay Holdings chef’s protégée, Chantelle Nicholson.

Former world mixologist of the year Nick Strangeway has also joined the hotel as a consultant along with Henry Besant, co-founder of the Worldwide Cocktail Club, to serve a modern drinks menu based on popular cocktails of the 1800s in the hotel's Booking Office Bar.

Knut Wylde joins the hotel as director of operations, with over 30 years experience in the hospitality industry gained from working at hotels such as The Savoy and The Lanesborough.

The Marriott-operated St Pancras Renaissance Hotel will also feature a spa and gentleman’s grooming salon when it launches, headed up by Rachel Lowe-Mukherji from The Lanesborough Hotel, and GQ magazine’s favourite barber Carmello Guastella respectively.


Kevin Kelly, general manager at the hotel, said the team would work together to ensure guests have “a flawless experience”.

“Our team is the best in the business and the great depth of knowledge and expertise means that this hotel is going to bring something very different to the London hospitality scene,” he said.

The 245-bedroom hotel will embark on a soft launch at the end of March following an extensive refurbishment to return the property to its former 1800s glory.

The Gilbert Scott is set to soft launch on 28 March, although the hotel will celebrate its grand opening on 5 May, exactly 138 years after the original hotel opened in 1873.
