ETM Group, the London-based pub company run by brothers Tom and Ed Martin will open its tenth pub next month on the site of The King's Head at the Barbican.

The latest venue, on the corner of Chiswell Street and Silk Street, is currently undergoing a refurbishment before it re-opens as the newly-named Jugged Hare.

Following hot on the heels of the opening of its first West End pub The Angel & Crown​, the Jugged Hare will also be the second venue that the ETM Group has opened in conjunction with the Montcalm London City hotel, which opened at the site of the former Whitbread Brewery in May last year.

British produce

The company plans to make its latest pub, which will include a 60-cover dining room and 40-cover public bar, a real showcase for British produce with seasonal game, meat and wild fish and shellfish to be key parts of the menu. Jugged Hare, the 18th Century dish on which the pub bases its name, will feature on the menu when in season.

An open kitchen overseen by head chef Richard O'Connell will include an eight-spit rotisserie as well as a charcoal grill where meat and fish will be roasted and grilled on a daily basis. A cold room will also be built into the kitchen for the purpose of ageing meat and hanging game.

Tom Martin said: "This is a project that we have been working on for a very long time and it will be a pleasure to showcase our genuine passion for British produce, particularly meat, game and wild fish and shellfish, alongside fine wines and real ales in an English pub setting”.

Own-label ale

The opening of The Jugged Hare will also mark the launch of ETM’s own bottled pale ale of the same name. Brewed in conjunction with Sambrook’s Brewery, the ale is 4.2% ABV and is made from an English malt, hops and a unique yeast.

The group already lists own-label wines and in addition, its latest venue will also feature a 'wine by the glass' dispenser and preservation system to allow fine varieties such as Vosne Romanée, 1er Cru La Montagne and Bruno Clavelier 1999 to be served by the glass as well as a walk-in wine room for drinkers to be able to choose bottles themselves.

ETM's Chiswell Street Dining Rooms, its first opened venue in conjunction with the Montcalm London City,​ has been trading since May 2011.
