Corner Room, the brasserie at London’s Town Hall Hotel, has appointed John Christie as its new head chef.

Christie began his career at Kinaird House Hotel in Perthshire and spent three years working at Andrew Farlie’s two Michelin-starred restaurant at Gleneagles Hotel and Resort before gaining further experience at Hibiscus in London and El Cella de Can Roca in Girona.

The young chef, who uses innovative cooking techniques to bring out the best from simple flavours and minimal ingredients, has developed a seasonal menu centring on British produce for the 30-cover Corner Room restaurant.

“It’s a unique opportunity to personally select and work with a great range of British suppliers, and to showcase their produce in a way that best reflects its quality and the talent of the creative team we have here at the restaurant,” said Christie.

Dishes include roe deer with baby gem kimchi, pear buerre noisette and dandelion, and John Dory with kohlrabi, Cornish crab and lardo, with greengage, green tea and cobnut for dessert.

Both a 6-course tasting menu and selection of small a la carte dishes are available.
