Nathan Eades takes the reins at The Montagu Arms

Hampshire hotel The Montagu Arms has appointed former The Wild Rabbit chef Nathan Eades as executive chef.

Taking over from Matthew Whitfield, Eades will oversee the New Forest venue’s fine dining restaurant The Terrace as well as the more casual Monty’s Inn. 

His menus will see ‘British home comforts reimagined in elevated and exciting ways, providing modern and refined yet unpretentious dishes’.

“The Hampshire larder is one brimming with fantastic produce and I am excited to develop a dynamic menu using ingredients from the hotel’s kitchen garden,” Eades says.

“I look forward to working closely with my new colleagues to produce a memorable experience for our guests.”

Eades was head chef of The Wild Rabbit for four years. Prior to that he was head chef under chef director Luke Tipping at the Michelin-starred Simpsons Restaurant in Birmingham.

He has also held senior positions at a number of other restaurants and hotels including Fishmore Hall in Ludlow and Lainston House in Winchester.
