Raz Helalat's Tutto to launch in Brighton next month

Tutto, the latest venture from Brighton-centric restaurateur Raz Helalat, will open its doors next month on Marlborough Place, close to the seaside city's North Laine area.

Set in a restored 1930’s former bank and first announced back in April​, Tutto - meaning 'all - will be inspired by ‘traditional Italian dining culture’ with Helalat bringing in former Café Murano and Padella chef Mirella Pau to lead the kitchen. 

The menu will be split between cicchetti, antipasti, primi and secondi dishes, with Pau combining classic ingredients with some not traditionally found in Italian cuisine including jalapeño, fermented chilli and orange mustard.

Dishes across the menu will be designed for sharing, with cicchetti options including tomato, mozzarella and basil panzerotti; and breaded butterflied sardines with spiced chopped eggs.

Other dishes to feature on the launch menu include taglierini with native lobster, fresh datterini tomatoes and fermented chilli butter; salt hake with panzanella sauce, Ortiz anchovy and basil; and veal cutlet Milanese with rocket, pecorino and roasted San Marzano tomatoes.

For drinks, Tutto will be home to a 90-bottle wine list covering the breadth of Italy, alongside a menu of cocktails complete with a dedicated menu for spritzs and negronis.

The reclaimed features of the 70-cover dining space will be contrasted by contemporary elements including local artists’ paintings, chandeliers hung from the site's high ceilings, and velvet-banquette seats with marble table tops. The restaurant will also have an open kitchen alongside a crescent-shaped bar embellished with spirits, wines and high bar stools. 

There will also be a 30-cover terrace. 

The opening will take Helalat’s Black Rock Restaurants Group’s Brighton restaurant portfolio up to four.

Helalat is among Brighton's most established and successful restaurateurs having launched the The Coal Shed in 2011 followed by The Salt Room in 2015. In 2017, he opened a London The Coal Shed at London’s One Tower Bridge development.

His most recent project is bar restaurant Burnt Orange, which attracted positive reviews in the national press as well as a Michelin Bib Gourmand.

Tutto will open on 15 September with soft launch taking place from 6 - 14 September.
