High-profile pastry chef Cherish Finden has left Shoreditch’s Pan Pacific London to ‘focus on a new career chapter’.

Finden was named executive chef at the Singaporean-owned hotel ahead of its 2021 launch having held the same role at a number of other top end London hotels. 

The Singaporean-born chef oversaw the entire pastry operation at the 237-bedroom Bishopsgate Hotel including its Straits Kitchen restaurant, The Orchid Lounge and its café and grab-and-go operation SHIOK!

The latter combined the ‘traditional flavours of Finden’s childhood in Singapore with her signature flare, bringing a taste of Singapore to London’ and served high-end pastries including petit gateaux shaped like handbags and teapots and ‘kopi tarik’ - a take on Singapore’s famed ‘pulled’ coffee with condensed milk served with an edible spoon and cup.

“Cherish joined us in pre-opening in 2019 and was instrumental in the success of the hotel since opening with her incredible creations, and it has been an absolute pleasure working with her. All of us at Pan Pacific London will miss her and wish her all the very best with her new endeavours,” says Anne Golden, VP of operations, UK and North America and general manager for Pan Pacific London. 

A former Bake Off: The Professionals judge, Finden is one of the UK’s best-known pastry chefs. 

Pan Pacific London was a homecoming of sorts for Finden, who cut her teeth at Pan Pacific Singapore in the early 90s.
