Nathan Cornwell to take over the kitchen at Chiswick’s The Silver Birch

Chiswick restaurant The Silver Birch has appointed Nathan Cornwell as head chef as it gears up to celebrate its second birthday.

Cornwell - who reached the finals of the 2021 Roux Scholarship - joins from Mark Birchall’s Michelin-starred The Barn at Moor Hall where he was head chef. 

His cooking CV prior to that includes Le Champignon Sauvage and Kitchen W8 in the UK and multi-starred Scandinavian restaurants Geranium, Kadeau and Oaxen Krog. 

First time restaurateur Tim Price launched The Silver Birch on Chiswick High Road in the summer of 2021. 

The kitchen was initially overseen by Kimberley Hernandez but the former XU, Kym’s and St John chef departed early this year.  

Cornwell will continue to use ‘locally sourced, hyper-seasonal ingredients’ and bring ‘a refined and elegant cooking style’ to The Silver Birch. 

Dishes on the new menu include crispy pig’s head, Savora mustard; ex-dairy cow tartare, smoked oyster, kohlrabi sea herbs, herb cracker; Herdwick lamb, wild garlic, smoked onion emulsion; and brown butter chocolate delice, milk sorbet, caramelised white chocolate.
