Peruvian restaurant Floral by LIMA in Covent Garden is to be replaced with a more authentic offer by its owner this summer.

The restaurant and its downstairs bar The Lost Alpaca will become LIMA CANTINA in September, building on the 'burgeoning influence of Peruvian cuisine around the world', according to the group.

The new offer, which will come after a full restaurant and kitchen renovation, focuses on preserving traditional cooking methods ‘to deliver even more authentic flavours’ from a sharing-style menu.

The centrepiece of the new menu will be the ‘pollo a la brasa’ Peruvian rotisserie chicken, with whole chickens cooked in a newly installed ‘rotombo’, a classic Peruvian charcoal-rotisserie oven that will be the only one in London. The chicken will be marinated in Peruvian herbs and spices and will be accompanied by a signature CANTINA sauce.

Other menu items will include Peruvian classics, including sharing plates such as sea bream ceviche, and prawn causa nigiri as well as dishes cooked on a newly installed charcoal grill that will include aji panca BBQ pork ribs.

The renovation will introduce a bar to the upstairs area, with increased space for dining between the two floors.

Its sister restaurant, LIMA, in Fitzrovia, recently celebrated its 10th​ birthday.
