Ireland-based Mexican restaurant brand Boojum has chosen Leeds for the location of its first site in England.

The Leeds restaurant will be Boojum’s first mainland UK store and its 16th site overall with plans to also extend into Nottingham, Birmingham, Liverpool and Manchester in the near future.

It will operating a multi-channel, sit-in, takeaway, click ‘n’ collect and delivery model.

“Boojum's expansion into Leeds is no coincidence. The city's bustling student life and reputation as a foodie paradise make it the perfect stage for our vibrant flavours,” says Boojum founder David Maxwell.

“We're not just serving food; we're creating experiences and we're excited to blend our Belfast roots with the dynamic spirit of Leeds."

The opening follows the acquisition​ of a controlling interest in Boojum by ASK Italian, Zizzi and Coco di Mama owner Azzurri Group in June last year, with the group saying at the time that it was looking to 'target the rapidly-growing Mexican fast casual segment in Great Britain'.

Launched in 2007, Boojum operates 15 stores, predominantly located in Belfast and Dublin. It has a vision to deliver 25 stores over the next five years in major UK student cities.

Last year the brand was named One to Watch​ at the R200 Awards.
