The UK's chocolate entremet - one dessert had to be designed for six people to be judged on presentation while the other two were judged on taste and had to be designed for ten people with portions between 75g and 125g.
A Valrhona Macae 62 per cent origin Brazil chocolate and Mao Fang Tea infused prune sponge over an almond streusel, with a Valrhona Manjari cremeux, Valrhona Tanori mousse and a Valrhona Tanariva ganache with a Coeur de Guanaja 80 per cent glaze.
