The Linnaean Café will be overseen by former Stem + Glory and Barrafina Soho Fran Winberg, who will be working with the Sustainable Kitchen consultancy founder Julie Cleijne to offer ‘a nourishing and restorative dining experience’.
Building on the Sustainable Kitchen food ethos, Winberg has adapted the menu to include dishes inspired by his native Spain, also drawing inspiration from other cuisines including Japan, Greece and Italy.
The restaurant will lead on plant-led dishes, with options also available for flexitarians looking to add fish or meat to their meal.
Dishes available at launch are set to include nut butter pancakes; a vegan cheeseboard; and a selection of breakfast bowls, salads and soups.
A selection of vegan wines and gluten-free beers will also feature.
“It has been really exciting to work with the team at Linnaean to create a truly inclusive menu, with a focus on health and well-being,” says Cleijne.
“We love working with hospitality businesses to help them make changes to the way they do things by incorporating more inclusive, allergen-free and vegan and vegetarian options, so to be involved at the inception stage of a new restaurant and adopting this inclusive concept from the outset has been great.”
