Tom Kerridge’s Manchester restaurant The Bull & Bear to opens in Stock Exchange Hotel on 15 November

Tom Kerridge’s Manchester restaurant will be called The Bull & Bear when it opens in the city’s Stock Exchange Hotel on 15 November.

Headed up by Kerridge and executive chef Dan Scott, the restaurant will serve a menu reflecting Kerridge’s signature style of refined British classic comfort food influenced by his Marlow venues The Coach and The Hand & Flowers. Options will include rotisserie beetroot salad with feta and mint; fish fritter of the day with pease pudding and tartare sauce; and crispy pig’s head with celeriac témoulade and spiced date sauce.

A number of dishes served at The Coach will also make an appearance, including mushroom ‘risotto’ Claude Bosi; The Coach Burger; chicken kiev with cauliflower cheese; The Coach Chips with ‘Kerridge’s Bar & Grill’ gherkin ketchup; and The Coach profiteroles with soured vanilla cream.

Located within the Grade II listed building of Edwardian architecture, The Bull & Bear takes the space that was previously the trading floor of the Manchester Stock Exchange and will have a style that will ‘blur the lines between elegance and informality’.

Kerridge says he got involved in the project after receiving a direct message on Twitter from Gary Neville, the former footballer who owns the Stock Exchange Hotel alongside fellow ex Manchester United star Ryan Giggs and hotelier Winston Zahra.

“The moment I walked into that space that is going to be the restaurant I was blown away,” he says. “It is a place that speaks history and I wanted to be a part of it.

“What we’re trying to do is get great ingredients, cook them simply and serve them in an environment that is warm and friendly, and that is everything that Manchester is.”

The Stock Exchange Hotel is a member of Relais & Châteaux.
