Six by Nico team to launch ‘baked goods lifestyle brand’ Valaria

The team behind restaurant group Six by Nico will launch a patisserie and café in Glasgow later this month.

The 34-cover Valaria is billed as a ‘patisserie and bakery lifestyle brand’ and will offer items including cakes, pastries, breads, chocolates and confectionery to both eat-in and takeaway. 

Options will include éclairs with eclectic flavours including tiramisu, cereal milk and rhubarb and custard; macarons; danishes; and pain au chocolat. 

Valaria will also offer an exclusive house coffee that’s flavoured with dark chocolate, hazelnut and candied mandarin.

“We are excited to bring some of the most innovative and luxurious cakes Scotland has ever seen to Glasgow,” says Valaria general manager Ronan Mallon. 

“We are launching Valaria with a brand new concept store for the first time, debuting our signature bakes and goods that will be freshly prepared on site. The patisserie will be a new experience for Glaswegians, and our team is looking forward to showcasing our sumptuous products.”

Chef restaurateur Nico Simeone’s Sixco Group commissioned Glasgow-based contractors One Call to re-imagine the new space, which is currently under construction at the former Vodafone store at 333 Byres Road in Glasgow’s West End.

The patisserie will be open seven days per week from 8am until 8pm.  The interior has a colour palette of light, neutral tones with two core shades of pink and a pistachio green to add ‘subtle vibrancy’ to the space.

Sixco Group - which operates a total of 13 restaurants across the UK and Ireland including 10 under its core Six by Nico brand - is plotting major expansion across the UK and internationally following ‘robust’ financial results in the year since Covid restrictions were lifted.

Sixco Group recorded turnover of £30.8m for the year to June 2022, versus £18.1m for the prior 15-month period to June 2021.

Operating profits from continuing operations jumped to £4.4m to June 2022, against a loss of £600,000 in the pandemic-hit 15 months to June 2021.
