Darren Miranda
Darren Miranda has been appointed sous chef at The Horseshoe Restaurant in Eddleston. He joins head chef Alistair Craig, general manager Mark Slaney and pastry chef Jessica Huntley on the team. Miranda previously worked as head chef at boutique hotel Links House, Dornoch. He also spent three years as sous chef under Michelin-starred chef Charlie Lockley at Boath House, Nairn.
