Joe Paulinski is now restaurant manager of Tom Sellers' Michelin-starred Restaurant Story in Bermondsey, London. Since beginning his career as a waiter at a small Italian restaurant in Leicester, Paulinski has since worked at four-AA Rosette site Malyango in Leciester, and as assistant manager at the Michelin-starred Trinity in Clapham (where he first met Sellers). He also helped in Thomas Kellers' 10-day Harrods pop-up in 2011, worked at Sellers' pop-up Foreword in Bethnal Green, and then went to Per Se in New York, before returning to the UK.
