Jason 'Bruno' Birkbeck, head chef, Feversham Arms
The Feversham Arms Hotel and Verbena Spa has appointed a new head chef to take charge of its three-AA-Rosette restaurant.
Jason Birkbeck, known as Bruno in the hospitality industry, joins the hotel after spending three years at the Torridon and The Inn at Torridon in Scotland. He brings with him a wealth of experience which also includes stints at Hipping Hall in Kirkby Lonsdale, The Samling Hotel in Ambleside and Northcote Manor in Blackburn.
“I’m delighted to be joining Feversham and the staff and management," said the chef. "Working within a larger hotel and team offers me more scope to experiment and try different elements with the food; it’s certainly a step up. Game is my passion and I look forward to working with the local produce from the area.
“The hotel has a wonderful reputation, and the food on offer is one of Yorkshire’s finest. I plan on working hard to build a strong, focussed team that continues to deliver consistently outstanding food at impeccable standards.”
Charles Merchie, general manager of the Feversham Arms Hotel and Verbena Spa, added: “Bruno is exactly what the hotel needs, bringing with him a passion, dedication and flair that will see our already impressive menu get better and better. He has worked at some fine eateries around the country, which have helped him to cultivate and hone in his skills.

Bruno takes over from former head chef Simon Kelly. He is the latest management appointment at the hotel, with Charles Merchie recently joining as general manager and Lisa Kelly coming in as spa manager.
