Three months on from the introduction of the EU food allergen regulations over 100 top chefs, restaurateurs and hoteliers signed an open letter slamming the changes as having created a 'bureaucratic nightmare'.
Albert Roux OBE, Great British Menu judge Prue Leith and Wahaca founder Thomasina Miers were among those arguing that the rules reduced 'spontaneity, creativity and innovation' within the industry.
However, the group faced backlash from fellow chefs and Allergy awareness groups. Liz Allen, director of Allergy Aware Kitchen, told BigHospitality: "My concern is that a lot of chefs will only start taking the regulations seriously when a serious incident occurs."
