Bow Hospitality to launch The Merchant Steakhouse in Glasgow city centre.

Scottish-based operator Bow Hospitality is to launch a new steakhouse concept in the Merchant City district of Glasgow this spring.

The Merchant Steakhouse will take over the former Canteen 58 unit on Ingram Street in the city centre and serve a range of dry-aged Scotch beef alongside premium wines and signature cocktails.

Split across two levels, the restaurant will hold 80 covers and is set to bring 30 full time and part time jobs to the area.

The kitchen will be led by William Lee and offer eight different cuts of meat all sourced from 28 and 45 day dry-aged Miller Aberdeen Angus alongside a selection of dishes designed to put 'Scottish provenance and presentation' front and centre. 

“We’re excited to finally announce the launch of The Merchant Steakhouse,” says Ryan Bowman, director at Bow Hospitality.

“Our team have been working hard behind the scenes to curate a uniquely Scottish experience with a modern slant - from the very best meat in the country to Harris Tweed décor throughout.

“Our vision for the restaurant is to become one of the country’s premium steakhouses and ensure every guest through the door has an unforgettable experience and top quality steak. Stay tuned for sneak peeks of our menu - we can’t wait to show you what we’ve been cooking up at The Merchant Steakhouse.”

Bow Hospitality also operates Mexican street food restaurant and bar Mezcal and Japanese concept Saki Maki in Glasgow.
